How to Build a CV with Strong Characteristic and Unique Identity

          Many of you have lots of difficulties in building your career so far, and even all the hardwork you've done wasn't good enough to pay all your experience and expenses. most of you are working in a not good company that you can't learn a lot from them and some of them don't even have a future on.

          I will share some of my experience while building my cv in my career so far blog this time. but before that lets share and discuss how is you are going to do with the new job?. Are you really working hard to get this thing, or just by luck is your only expectation. for me i believe in work that all the success that i had is all comes in a degree of coded i believe in 10:30:60. what is that number? some of you might curious to know what's the meaning of thats numbers. that is a comparison that i do while explaining that in work wise for a successful career you ned to do 60% of hard work 30% or knowledge and 10% of luck.

          so don't you ever dream of getting a good position, good salary good reputable job by luck, because nowhere in the world that thing will happen. for example you are very lucky but you don't have the knowledge, do you thing you are going to be a great manager?, or you are very hard work but you never wants to improve your knowledge, do you thing you deserve to get 5000USD salary per month?. of course it is impossible. there is no example like that in the world.

          but anyway we won't discuss about work matter right now, but we will discuss about how to build a strong foundation of yourself before you even enter the competition in applying the job. based on my experience and all the application i've send to my previous employer, these are "the things" that you have to look after in your cv:

1. Picture of Yourself
         The picture should be a different show (just imagine the employer are having hundreds of cv on their table and all the picture are just the same?) while you have the different pose of yourself
          pros: they will see that you have a confidence which will make them interested in your cv
          cons: if you are not careful enough you will end up having a bad pose (if you are not used to          stand in front of camera with a different and style of pose, it will just looks weird)

2. Main Structure Design
         The design of your cv should be clean enough and don't make a lots of words on it, don't even do a "story" in your CV.(remember the employer doesn't have time to read your story of life, they are looking for someone to fill the empty position in their company so they will need it to be as easy as they can to get someone new.)

3. Information Inside
         FYI, the employer who got the cv are professionals and qualified person, so that you don't have to explained all your duty responsibility in your cv, if in case they want to know what did you do before, trust me they will ask you in the interview time (remember this is even before they decide to interview you). If you want to add some of your rewards and recognition from some company or any institute, please explain it in short words, at the end they will not care for what have you don't in the past

4. Repeatable Pages
        When you make your CV make sure that the information you put in there are very interesting one, let the employer open the pages of your cv back and forth just to make sure that you are qualified enough, you are special enough, or you are unique enough to be at their company. make an interesting design, interesting content and interesting words in your cv. Remember treat CV same as how you treat your jewelry. this is about your future and your career.

5. Characteristic
       And for the final subject is all about characteristic, whatever your position right now, whatever your attitude, please make sure that overall explanation in your cv is shown enough to the employer that you have your very own style and characteristic. with this thing trust me, the first step in getting a new job is already in your hand, and the next step what you have to do id how to do a great interview that will make the employer always remember with your interview even until you resign rom that company in the future.

Healthy Living Tips Ala Prophet Muhammad, Which Proven by Modern Medical Science

MODERNIZATION does provide a lot of convenience in the affairs of human life. All become faster paced, more practical, and certainly more efficient. But modernization is not something that remains without flaws.
Modernization in some ways it has been overwhelming, more precisely not able to handle the problem is essential. Among other health problems, both physical health or spiritual health.
Although the theory of growing health and continue to try to find a solution so far the disease of human life, in fact increasingly today people increasingly susceptible to illnesses. Not just physical but spiritual as well as disease.

Just look around us, every day there's always people who complain got thrush, abdominal bloating, shortness of breath, gout waist, and so forth. Even diseases that once only affects certain people; diabetes, kidney, heart disease, food poisoning, now already be familiar with almost all walks of life with different ages.
This means that the modern, it turns out the problem is not too little. Disease more frequent and increasingly vicious attack anyone.

 On this fact, a contemporary scientist, Fritjof Capra claimed to be surprised by this era (modernization).
Through his book, "Turning Point of Civilization" he argues, today's world is very strange indeed, supposed experts proficient and understand the subject matter they are actually now also no longer able to solve the pressing problems that arise in their areas of concern.

Economists fail to understand inflation, an oncologist at all confused about the causes of cancer; psychiatrist disrupted by schizophrenia; police so powerless against crime continues to rise.

Special health problems, further Capra wrote that modern humans are threatened by water pollution and food. Both types of human consumption is contaminated by various toxic chemicals.
According to him, in the United States, the ingredients of synthetic food additives, pesticides, plastics, and chemicals that circulate in the markets is estimated at one thousand kinds of new chemical compounds each year. It means that toxic chemicals have become an integral part of human life.
So, not surprisingly, is why people in this modern era is quite vulnerable to disease. Not just those who are old, who was on standby young children even had extra was fairly guarded.

Disease threatens every moment

Why is the disease being so close to humans and threaten every moment?
There are many factors that trigger it. Starting from a pragmatic perspective employers foods, instant paced lifestyle in the community, to the stage where people have started less concerned with religious Shari'ah in terms of food.

Recently (11/08/2011) Data Center Hospital Association of Indonesia (PDPERSI) reported that, Agency for Food and Drug Administration (FDA) released, as many as 1,416 items processed foods on the market do not meet the requirements. Ironically, the total is approximately 73 293 products packaging.

In terms of diet, the community also has a lot to implement an unhealthy diet. Like eating without begin and end with prayer, even while walking, but it is still much that is not used washing hands.

Modern medical world says that, eat a good way is to sit down and calm manner. It allows the body's energy directed towards the food being digested. Digestive enzymes will also work in unpleasant conditions.

To further perfect the digestive process, shall set aside at least ten minutes to eat in a relaxed atmosphere. While we are constantly Dhikr, how good God is so great to us. Viewed from the side manners, sit and eat in a way not in a hurry shows a good character.

Whereas the Messenger of Allah has given an example of 14 centuries ago, before the release of the medical world that eating should sit, calm and in no hurry. Islam even teaches to launch with a prayer. Similarly, in terms of cleanliness.

Eat Ala Prophet

To maintain health or avoid illness, food is the most visible factor that must be considered. However, a crucial addition to the type of food itself, a way of eating is very necessary to be considered.
Therefore prophet had any tips on how to eat activities which are basic human needs that truly bring optimal health and not have a negative impact.

1. make sure the food is halal and which is obtained either and does not contain haram elements.

وكلوا مما رزقكم الله حلالا طيبا واتقوا الله الذي أنتم به مؤمنون

"And eat halal food again better than what God has give to you, and fear Allah, that ye believe in Him." (Surah: Al Maidah: 88).

Do not forget to always have the intention of eating and drinking to strengthen the body, in order to conduct worship, and other things that may be useful for human being muttaqin.

2. Muslims eat only after hungry and stop before satiety.
The modern world was startled by the 'disease' of new, namely obesity. Overweight if left unchecked will invite more diseases. And, obesity is certainly the beginning, although not all, often stems from excessive eating habits. Therefore eat enough and do not overdo it.

3.Washing hands before eating,
if in a dirty or when not sure of the cleanliness.
"If Rasululllah Sholallahu Alaihi Wassalam while he went to bed in a state junub, then he made ablution in advance and when about to eat, he washed his hands first." (Narrated by Ahmad)

Healthy Ala Prophet

In the Islamic view, health is not only physical, but also spiritual. What if faith kropos healthy weight? Certainly very good if faith is also a healthy strong body.
Food is not the only cause of various diseases. Although a variety of physical ailments more commonly caused by food.

One thing that is important simply proven to be effective in minimizing the disease struck us was the confidence and strong will to implement religious law which has been exemplified by our prophet.

Although we have been eating a nutritious diet, regular exercise, but we mentally troubled, often angry, grumble, and the most pleased envy of others. You can bet we will be far from a happy life, making it susceptible to various diseases (high blood usually), the main spiritual disease that will ultimately have a significant impact on physical health.

Islam as a doctrine that is tauhidi, never damning one aspect and ignore other aspects. A common saying in the perspective of Islam not only fit his body, but also primed his faith, both moral and noble temperament.

How can we fit body and soul? Here are the steps;

First, get up before dawn or early morning to qiyamul Lail. For those of you who are students / students you can write in the quiet time. More Afdhal also if you wake up praying and praying. Because prayer at night time terkabulkannya likely large enough. And, do prayers in congregation in the mosque Shubuh.
If your home is fairly a bit far from the mosque, the conditions are very favorable indeed. You can walk to the mosque. So, in addition to the reward of a much larger, you can also work out at the same time while enjoying the cool air in the morning.
If you do this routine, walking will make more regular blood circulation, and blood will come in large numbers to the blood vessels are present throughout the body, so as to reduce or even eliminate a lot of fatigue caused by lack of blood supply around the corner bodies in some diseases.

Secondly, as much as possible do not easily emotional or irritable. Rasullullah saw, warns us, "Do not be mad, do not be mad, do not be angry." This menunujukkan that the nature of health and strength lies in jasadiyah Muslims are not alone, but that is further underpinned by the cleanliness and health of the soul.
If you are the type of person who likes to get mad, or easily provoked emotions and anger, the Prophet gave the following tips;
Change position when angry, when standing then sitting, then lie down and when sitting
Read ta 'awwudz, the anger of Shaytan
Immediately ablution and pray two rak do to achieve peace and eliminate anxiety heart

Third, do not envy other Muslim brothers. Happy if his grief stricken and if your brothers blessed is disgraceful attitude and can scorch our own good reward.

"Beware of hasud (envy and jealousy), hasud actually erode the rewards as fire consumes wood." (Narrated by Abu Dawud)

Fourth, always pray to Allah SWT to be given health. Intestate Prophet told us, "Ask God to salvation and afiat. Something really has no God-given after conviction (faith) is better than a healthy afiat. "(Reported by Ibn Majah).

Fifth, multiply fast.
One time, the author met a mosque in West Jakarta Grogol. He was already more than 70 years, but still physically strong. He was able to clean the mosque and up and down the stairs every day.
When asked, what's the secret, the answer is pretty short, "Empty your stomach twice a week and multiply drinking water with prayer. Any machine can be damaged if not serviced, "he replied simply. Subhanallah.
True, fasting, and prayer is one way of human servicing in order to remain physically fit. The Prophet had advised, the practice of fasting, contained many health benefits. "Your fast ye surely you will always be healthy."
By paying attention and trying to apply prophet in their daily way of life, God willing, we will not only physically healthy, our souls will always be maintained.

Relationship between Chefs and iPhone on the go...!!!

          With the new announcement of WWDC 2013 at San Francisco, once again Apple has done a great job. the newest update they do is way greater than any other Operating System around the globe. Android is great with another more choice of apps but with the limitation of great design and viruses, Windows 8 is not a bad choice either with great design and the cloud computing system but with the lack of choice in apps. Blackberry still with the second best messaging system after whatsapp (based from my opinion) way just too boring if we compare with other Operating System.

          Apple just release the newest iOS from their family what they called iOS 7. The different from this Operating System with the previous one is "a lot". they do radically designing their boring OS after more than 6 years ago. Sir John Ive is the most contributor after he took the position as well as Chief of iOS. with his speciality in designing all the apple product, he really success to bring the fresh air for the new family of iOS. 

          A lot of thing has been changed in this newest update, such as the icons, start screen, image, photos and videos capability, etc. at the end this just what i can say that Apple still releasing the best product in the world. I'd like to quote what Phillip Schiller said in the conference "can not innovate anymore, your ass!!!"... hahaha. what i like from this attitude is that, whatever happen in the world and the rumour said. if we trust in our skill forget about others and what people said, and that is what apple did.

          The best thing that ever happen with me since i'm using this iPhone thing was the "CAMERA". by being a Chef we need to have an idea of whats happening in the world specially with "food photography". and iPhone camera was the best mobile camera ever i've used in my life. i don't even have to bring my professional DSLR camera again at work while i'm shooting my food for advertising and socializing the new menu. 
          All i can say is that iPhone is still the best mobile phone in the world. nothing can be compared to this beautiful thing. the design, the apps, the way they placed their icon, and all the proportional they did in their OS was uncomparable. so please Apple keep continue to make a great product for us, so that a lot of people will get the benefit of your product "from apple fanboy". Cycling or Driving Car for Work?

             This is a serious matter for some people whether to choose bicycle or car as their transportation for work.
the benefits of each are very different, let say with bicycle you can have a healthy lifestyle and cheaper cost since bicycle doesn't use any petrol, but some bicycle price are ridiculously expensive, some of them can reach 8000 usd. even how expensive the bicycle is, it is very different if we compare with car transportation. whether private or public one or even personal car. every choice has different benefits and loss.

              I'd like to ride bicycle if the place for work just about 5-15 minutes by walk, but if it is too far, for example 1-3 miles, i prefer to ride my own car. it is easier and less headache. work in the kitchen will take lots of my time daily, let say, 16-18 hours i spent mostly in the kitchen and less at home. I'm really lucky that my wife and families understand with the situation that i have right now.

             Car in middle east are cheaper by almost half from the price in other country, even the gasoline, so actually driving car in here are the best way to commute to other place, since the weather in Middle east also not a friendly one. June-August are the season where the temperature can reach 45-55 degrees of Celsius at noon, and 35-45 Celsius at night. just imagine afternoon you ride bicycle with this heat and high humidity in Middle east, mostly people will say "NO" for a bicycle or motorbike at this time.

            But again like i said before for me, it is just a 5 minutes distance instead of miles away. i prefer to ride bicycle more than car, the reason are that bicycle is more faster (since we don't have to find a parking space) as you all have to know that in Bahrain and Middle east the only problem from the car mode transportation is Parking Space. Car is way cheaper than motorbike and the weather as well makes people intend to drive car more than any other transportation.

            I love my bicycle that i bought in one of the mall in Bahrain, it is not the cheap nor the expensive, i think it is just the exact amount of money that i want to spend for just a Bicycle. for me the important one if the bicycle itself should have a light body weight with a strong quality product, i prefer to have carbon instead of aluminum since aluminum still left of the heavy weight if we compare with carbon fiber body. But again, with this different matter, it will affect the price as well. whatever is your transportation that you drive for daily work routine, it should match with our characteristic and useful for you and your family. set your budget, see your needs and buy just exactly for what you need if you don't want to waste your money for nothing. Bloggers or Real Jobs for your Income

                I started this job 2 weeks ago actually, and i never planned to do this job. but day by day i'm writing this blog, i feel like this is an addicted things. a day without writing in my blog makes me feels empty. i heard lots of people resign from their real job just get their financial from this blog. i haven't reach into this level yet, but i believe soon i will get what we called passive income.

                 Couple year ago i had my very own YouTube channel, mostly all the time i sang or made some videos in there, some of it famous and can reach more than 50 thousands viewer and some just only hundreds. i feel that what i do that couple year ago just for a hobby thing. i never had such an idea that by putting all of our thought in this blog can make such huge amount of money.

                 The more i do this writing thing, the more i'm enjoying it day by day, i like to share whatever i had in my mind everyday, either it is just a simple recipe or even just a nonsense like this. at least i'm not lying to anyone for what i've done, what i do just put all my thought so that i can share all my experience, and it is also gonna be great if people can reply and give some feedback about what i do, or any review i did.

                 Well, this two week feels so fast, i didn't even realize that its been two weeks. the very first time i did my blog is when i buy this Google package for a website which cost me around 10 USD per year. at the first thought that is it really worth to spend that much money just for a blog, when you also can get a free website address by paying nothing. the difference is that paid with paid website you can choose whatever name you like (as long as it is available in the net) if it is not available do not worry cause that the website itself will give you some suggestion for you to choose. and if you choose to get the free one you'll have to deal with an extra name in your site such as

Remember one thing, when you want to choose your very own website it should be something unique, simple and different, also the name should represent for what you are going to do in your website. somebody tried to offer me that they'll make a website design for me but with some money as consequence. for me i thing i will use free spot from Google Blogspot idea, since it is very simple, they'll also provide you with whatever you need in your site. and with this blogspot address, you can link this into you very own website. Designer Chef's Uniform vs Wholesaller

             As you all know, today chef uniform are not the same like five to ten years ago. what we are wearing now, sometimes was made by some designer or at least in a good quality textile. the model is more variable right now, some are stylist looking and some are just simple model either Japanese style with robe to tight in our back or just classic western style with double button which reside-able. the price of each jacket nowadays is also have a huge difference starting from 10 dollars until 1000 dollars depend on what material you use and whose the designer.


            The hotels branding matter also make all the uniform used to be from their concept for example Armani Hotel in dubai or Bvlgari Bali. their concept in making the uniform are very unique since they can promote their clothing brand but they also making lots of profit from the hotel
itself. Some places now even they do to design chef's uniform as we like, we can choose from vary of materials and colors, design and the price of course will affect on what we choose.

            Lots of factory also now sell this thing for wholeseller, this will be a cheaper price with medium quality, but we also can decide whether we would like to have the better material one then we buy it as a wholesaler items price. It is very easy nowaday to find Chef's Stuff everywhere, not like 5 years ago. after the booming of culinary industry everything is becoming so easy for us. Branded knife such as Victorinox, Zwilling, Global, etc are everywhere in the shopping centre.

             Culinary student are very happy right now since whatever they need is always easy to get, unlike me couple years ago i even have to go buy from online shop and sometimes they charge big amount of shipping fee,for example i supposed to pay 100 USD and because of shipment fee i have to pay 200 USD. The Culinary world are now becoming more famous, people don't see us in an half naked eyes anymore. but there are some consequences from this matter as well, such as lots of unprofessional chef are calling themselves "Celebrity Chef". anyway, there is always positive and negative side from every matter, the important thing ones is that we just do our best for whatever it is we do and pray to Allah, so that whatever we do will get good rewards and will be a beneficial for others. Chef's Job and Office Workers in My Opinion

           I think this title can be a controversial post this time, since nowadays people start to think that being a "Chef" is really a promising job. Unlike before while people still see us in half naked eyes and said that being a chef is not a real job "common mate get a real job!!!". what they mean real job is working in the office with suit and tie, polished shoes and fancy car. but for me i don't think that kind of job is a fun thing to do. i feel like i'm in a jail specially with that tie and a "must" polished shoes.

           Couple Years ago i remember that when i said my job was a chef ,they start asking me how possibly a person like me can be a chef, i mean real chef. i didn't even ever show any interest about cooking at all. for me i'll eat everything whatever anyone served me. i feel that i can't say any bad thing about food because lots of people, even they couldn't get a meal in a day. even just a handful or rice or a spoon of porridge. they asked me like how much i earn from this job, is there any other benefit beside basic salary, how is the pension scheme etc and my answer is very simple. let say i'm a smart guy and very rich man but i don't have any talent in being entrepreneur then do you think i will become a richer man? the answer of course not, because we can't predict our future but we can make it happen. it all depends from what is your dream and how hard you work for that.

           I got into this job since my father asked me to work if i want to get some more money since i was 14 years old. that's the reason why i really appreciate this job so much. you can't get a job in the office if you are 14 or you don't have at least diploma or bachelor degree. unless if it is ok for you to become an office boy. and your job is only to serve the people with your tea or coffee. i don't feel that job is right one for me. since i was 5 years old i had this talent about art, i like to sing, dance, paint, theater etc. and actually what happen to me until now, it just happen by coincidence.

              When i was 14 years old i worked in one of the restaurant nearby my house, so what happen is, i finish my school hours then i go straight to the restaurant and work as dishwasher. that time i get get paid 650 escudo or let say around 6,5 euro. that time i spent almost 4-5 hours working everyday. my parents knew the chef and the owner, they are just like a far cousin from my father side. i work there for almost 8 months until i get promoted become a cook helper. even at that time i didn't expect to get a promotion. the Chef relly like me so much, he felt that i deserve to get this promotion even my age was only about 15 at that year. the reason why he wanted to promote me because accidentally he saw me keep smiling while i'm working in the dish-washing area.

            So, after that promotion i kept telling to myself that i shouldn't waste my time for a nonsense thing what normally teens do, like playing around and etc. i intend to focus myself while i'm still young so that before i'm old enough, i can have a relaxing time with my families. because i felt with my father business he never had enough time for us. so i can't really have good time with him since his schedule was hectically crazy. i won't repeat what i felt before to my children, so this the my story about me for not being a someone who work in the office with suit and tie, not because i hate them or i don't like the job but i feel that whatever job you do as long as you do it by heart and with hard-work it will get paid as what you did. keep this in your mind, when you have lots of knowledge and skill, money will comes after you. keep working hard and think positively then you will get what you wanting from whatever your job you do. and the most important one is, Pray to Allah and never forget that whatever you had right now is comes from Allah. Is Dessert "A" Must after Your Main Course?

             Most all of us don't find it is a must, since sometimes when we have this particular dish to end our meal. since some people is on dieting program, some

doesn't like sweet at all and some people are just don't want to spend that much money just for that. i think it is quite fair because even myself sometimes i just want to skip this course just go straight home or for a coffee and tea instead.

            for example when i go to restaurant with my wife, i don't usually order since i always let my wife choose what food for me. i'm very easy with whatever food she choose, even at home i will eat whatever she cooked for me. for example a bowl of rice with noodles or maybe pizza with chocolate dessert is ok with me. i found out that for some people after my interview with them, 60% like to skip the dessert mostly because they already feel too much for the mains and another 30% just doesn't want to spend more money for the dessert. What interesting is 10% of them decide not to answer the question because not affecting the meal at all.

               well, lets talk about what kind of dessert that i like. for me chocolate is one of the best thing in the worlds. i like it so much since i was a kid, i still keep eating this beautiful things until now. it just giving me lots of sensation about my feel. sometimes i feel happy after ate chocolate or the other way around and even sometimes i felt sad.

              I did some research that a great-testing piece of chocolate inevitably makes us happy inside. of course, it doesn't hurt that chocolate contains phenylethylamine (PEA), a natural substance that’s reputed to stimulate the same reaction in the body as falling in love. That’s why, even at a times when we feel down, anything about chocolate feels so comforting.

             Well thats what the research say about chocolate, but for my opinion from an eye of the common people, what chocolate has is the texture and the flavor that actually make us feel relax and comfort. i mean just feel and remember how it taste when it melted in our mouth and you feel a little bit bitterness and sweat on it. this kind of feeling we always keep in our mind, days or even weeks.

             There are two different type of chocolate, which is called white chocolate and the other one is dark chocolate. but do you know that white chocolate isn't chocolate at all, because the white chocolate consist only cocoa butter, powdered milk, sugar and a bit salt. then the question is why people calling it chocolate then. i try to do a research in the internet but haven't find any reasonable answer to satisfied my question.if any of you know what is the reason and when the history of white chocolate begin, feel free to post a comment in this blog. at least lots of people will learn more by doing this together.

             In Manama Bahrain, there is this one area that famous because of the culinary complex they have. this area called Adliya, and in this area also it is a place where one of the oldest fine dining venue been built 15 years ago. people used to call this restaurant "Zoe". The concept that they offered is casual fine dining and lounge bar. well, we can say that this kind of concept actually very easy to find everywhere right now, but as one of the oldest fine dining restaurant in Bahrain, Zoe already did great job with the concept for a very long time ago.

             The food they are serving is based on The International Cuisine with little twist of Arabia Mediteranian. The New Executive Chef Allan Octesa has brought this amazing twist on a New Mediteranian Cuisine way further more interesting and better. anyway He is actually kind of unique, since He had this combination of half portuguese and  half indonesian blood that he got from his parents. He also had lots of experience and worked with Michelin Star's Chefs while he worked and travels around the world. Name it Gordon Ramsay, Santi Santamaria, Claude Bossi, Fabrice Canelle, and more. His Molecular Cuisine influenced has brought Zoe to the new level. What he is trying to do now is to make balancing between flavors and simple fresh ingredients so that we can have the sixth taste in our meal .we called this as "Umami" in Japan. He believes that combination a lot of taste,will stimulate someone's taste. in their sense and will re-imagine the new flavor that we'll always keep in our mind forever like love.

            With his talent, he is going to bring back Zoe into the best era as when as the first time they opened this restaurant 15 years ago. Being only 28 years old, he sure has lots of experience and strong enough to hold the leadership and be the front line in Alghalia Family. Zoe isn't a freestanding restaurant, but is it parts of one biggest group company in Bahrain named Alghalia. Alghalia itself has many diversion in his business such as Farm, Spa, Restaurants, Banquet, Hotels and Construction. The CEO which is Kuwaiti National has putting all the trust to Chef Allan Octesa to regain the satisfaction from Zoe's Guest.

             The New Menu is already been prepared and tried so many times with best is the result. he will start the new menu with full of confidence and compliment from Zoe's guest. In shaa Allah within one or two months when all the Marketing's and Promotion Department is ready, menu been printed, Zoe will launch it. and later on, with much improving business in Bahrain, Alghalia is planning to open another branch for their restaurant business. hopefully within next year we already can see another branch of Zoe Fine Dining in Manama. don't forget to pass by to Zoe when you visit Adliya, Manama. Gadgets and Technology for "The Chefs"

                 For Chefs knife is not the only one for them, we are using lots of gadget and high technology to support our work, such as laptop, iPhone  DSLR camera and the equipment, another laboratory equipment etc. Being a Modern and young chef is doesn't mean that you will stay in the kitchen

and cook for our guest only, but we are doing so many other job that not all people can do it, we do our preparation and cooking (for sure) we do our paperwork (food cost, recipe, staff data, profit&loss, etc) but we also do photography to make the best shot for each every dishes we made.

                 Some sample of the picture i took is in the blog this time, i really have to show to you what did i do in couple years and to show you that being a chef with art skill is becoming one of the additional point in your CV. but some of my picture also i did with the simplest way to take a shot, but with the quality which we can't say bad either. like used my iPhone 5 just to get a great picture. since iPhone 5 camera is one of the best camera outside for a mobile phone and lots of photography software also to support and edit you image direct after you took the picture.

                  Laptop also very important since with this gadget we can be more flexible in moving ourself to a place where we have to move. specially in my position right now as an Executive Chef in "Zoe" Alghalia Bahrain  i have to move a lot so that mobile gadget is very
important, of course it should be the subscription from telecom provider's 4G LTE and WiFi technology. nowadays technology without WiFi or or 4G is sounds impossible since whatever we do now is always online. shopping and buying vegetable also getting so easy, we don't have to go out just to buy some vegetable, because lots of groceries now having online system ordering and keep in mind the price of course higher than you buy in the market, but normally this system guarantee us with the very best quality of vegetable.

                Day by day the world is changing and everything about food as well, that's why as a Chef i have to keep updated with whatever happening in the world start from the fashion, gadget, lifestyle and gadget so that i still can compete with lots of younger chefs  there which now the are improving a lot since the modern world is helping a lot. but again whatever happen with the gastronomy in the world it will always remember that the food art is always comes from loves. Between Chefs, Birkenstock and Safety Shoes....!!!

                Pick up Table 25...!!! Yes Chef, and all the commis chef start to answer the command from the head chef, this is a common routine in the kitchen while the service time is start, sounds from blackpan stove and even old refrigerator is a common thing in the kitchen, what else is common in the kitchen is shoes. for us the shoes is one of the important thing, for me i think the second important one after my knife's collection.

                In the beginning, at the first time i place my feets into the kitchen, i wore the safety shoes for work. but time to time i like to change this habit  because i found out that it is not quite necessary to use a safety shoes in the kitchen. since mostly i don't work in banquet anymore,
but even for chefs who works in banquet for a big function, i don't think it is necessary as well. because for me i believe comfortable shoes is for your future.

                I don't mean that safety shoes is not comfortable, but the thing is, it just too heavy. what i mean by heavy is like 1-1.5 kg per pair. so just imagine while you have to stand for almost 8-16 hours a day in the kitchen and you are carrying a heavy duty in your feet. it is so unnecessary. and why i mention birkenstock as the title because, as i wore so many different brand of kitchen shoes, start from kings, caterpillar, systems, japanese clogs, and last and until now i'm only wearing birkenstock (boston model). but from all those good brand, for me i prefer birkenstock than any other shoes.

              It weights only 500 gram per pair. so just imagine how comfortable your feet is. carrying it without any burden to wear it and specially, after your duty finish you won't feel any pain in your feet. bye bye pain bye bye stress....see, with the picture that i place in this blog, you can see how heavy is the shoes (i mean for the safety shoes). it has steel and heavy duty rubber and leather, which is good actually for a field worker like overseas and construction. but for chef like me, i don't suggest this shoes to be worn everyday. Trust me, once you try to wear birkenstock you'll love it so much and one more thing, this shoes also very strong and have a  great build quality. normally i can wear this shoes between 2-2,5 years. so, happy working guys (Allan Octesa,2013)

               With blog today i want to share some tips how to make this famous Indonesian dish called "Martabak Manis". I did this video couple years ago, that time i was really craving to have this food. since i'm a chef, i tried to make one and it was a huge succeed not because i never make it but because even i'm only using simple home equipment it did taste like martabak and the texture is just as good as the original one. well i will not mentioned any recipe or even the procedure in how to make martabak manis in this blog today,instead of i would like to share the video that i made years back.

           Thanks to Youtube and the information technology today, to make everything easy, unlike couple years ago when telecommunication still not in their best era. to communicate with our relatives back in hometown, it's way too expensive or difficult. Nowadays BBM, Whatsapp, Facebook or even Twitter can be used as new way to communicate.  this social media also had a big improvement day by day to accommodate people's need. it is very easy for us to share our though, our photos or even videos. well i can say that some of the youngster today do lots of useless thing in internet by being over actively useless. It's better for them to use their time wisely, and do more work instead of playing.

           Nowadays it is very easy for us to find any recipes from different country or even in different language translation. but again sometimes it doesn't mean that we can do the recipe very well. This is the reason why i made these videos to help you in making this famous dish from Indonesia, specially for all Indonesian foreigner abroad.

Smoked Tomato Soup

             Winter is past and now we all need to prepare for the summer. this hot season in middle east is one of the most difficult time in middle east, since the temperature can reach until 50 degrees Celsius at noon and around 40 degrees at night. just imagine, with the brightest sun in the Arabs plus humidity around 60-80 percent it's like having free Sauna everywhere while normally you'll have top pay around 3-20 BD just for that.

             Well now, let just keep on side this summer "thing". this time i will bring one of the tastiest soup I've ever made since ever in my life. i called this soup as "Smoked Tomato Soup". as an entree, it is very light and tasty, full of flavor and well presented. to had this recipe done, it's not very difficult. by using our everyday ingredients like "Tomato", you can have fresh tomato or even peeled tomato as your "Main" ingredients, any kind of tomato will work for this dish. one thing that you have to keep in your mind before start the cooking process. All dishes you made, do not follow the recipe but instead of just use your very own feeling.

              To start this recipe we need to prepare some basic ingredients in cooking which is "Onion and Garlic" . in Asia people intend to use shallot than onion. there is not so much different between these two ingredients, since both has the same function to complete the missing flavor to your food. alright lets go back to the recipe, first lets chop the onion and garlic roughly, don't worry if it is going to be too big  in size because at the end we will blend all of the mixture, just chop it off how you like it and keep this on the side. Next, what we need to prepare is the main ingredients itself, which is tomato. what we need to do with this beautiful and tasty ingredients is, cut it into half and sprinkle in some caster sugar on top the meat side from each cut tomatoes.

            Now the question is how to make the smoked flavor comes to our tomato soup? and the answer is very easy. that we have to put smoke inside the soup. but then we will have another question which is how to put the smoked inside the soup, and how can we make the smoke itself. to do this, what we need is a smoking hot pan by pouring little bit of olive oil in a very hot the pot (the reason we use olive oil in here, because olive oil has a very low boiling point if we compare with any other oil such as corn oil or vegetable oil). when the smoke start to appears in our pot, start to put your halved tomatoes in and let it burn and caramelized nicely, don't worry to make your soup taste bitter because it is burned, as you know tomato itself contains a lot of sugar and this sugar content will turn into caramel and give the smoky and sweet taste in our soup later.

          Next what we need to do after the tomato caramelized well and all the juices comes out, lets just put the half of the ingredients that we prepare before which is onion and garlic. stir well, and let the onion and garlic cooked for about 5-10 minutes or until sweetened enough then add some fresh stock (vegetable is preferable, but chicken stock is allowed). let this mixture boil for about 30 minutes to reduce the consistency and to let it taste better at the end. after this we need to prepare another deep pot then put some cubed butter and melt it (unsalted butter is better in this case). after this process add some spice that you like and whatever you have at home is better, this time i'm using cumin, turmeric, ginger and cinnamon because for me, this all spice will work together with tomato. lets cook the spice together with the sweetened onion and garlic. we need to cooked this spice well, because uncooked spice will make your soup taste"disgusting" and become an unpleasant flavor. so after the spice cooked well and nice flavor comes out, pour over the reduced and boiled tomato inside the pot.

         Cook again for another 30 minutes to reduced the consistency (adding little bit of water is necessary), the reason why i'm cooking tomato in such a long time, because i want to let the tomato taste even better. their natural sugar contains will release it's caramelized flavor and will make the taste amazing. 30 minutes pass, then what we need to do is to blend it using your home blender then after strain the soup with fine strainer. Voillaa, the soup is ready now, garnish with ricotta cheese and black olive. now, we'll make our family love it and even ask for more. (Allan Octesa, 2013)

Bahrain's Jobs Security

            Manama 2013, April 19th. today is the first day of annual event in Bahrain and this is, one of the most important Calendar for Bahrain. Mostly people love to watch this event and as a big sport calender, Formula 1 Race is one of the biggest annual event in Bahrain. the circuit has been build beautifully in the center of the island riffa, which mostly is a reclaimed land. Lots of people gather from around the world and came to support their favorite team. Hotels, restaurant, and businesses in Bahrain is in their peak season this time. Some places can triple their income than their normal operation in a year. lots of opportunity came in here at this season. Road is always busy with expensive and fancy car. People love to walk at this time in sideways since the weather is still quite nice. It is warm and windy even me, i like to stay outside at this time. Saudi  people love this event so much. they got this benefit since the bridge between bahrain and Saudi it built. and also since it is very easy for them to have such an alcohol and party which is prohibited in Saudi. they usually came to Bahrain in a group or alone just to relax and spend lots of time and money in here. Bahrain is a peaceful country where the most local here are the friendliest Arabs people in middle east, the are very humble and easy going

             About 2 years ago some group of shi'a people trying to stop the Bahrain Formula 1, they named themselves as a group of February 14th. unfortunately they couldn't stop the event to be held in Bahrain, polices is securing in each every corner in Bahrain with their heavy vehicles, gun and armor as their protection. but even still the riot and protest continues until now. i really dont understand what is happening with this people, because this "thing" is one of the reason that made Bahrain's economic in a very bad situation, business is down and lots of foreigner been terminated since the business in Bahrain right now not a profitable section as before. some foreigner struggle and choose to stay here with some different option, one had to stay here but by letting the company reduced their salary and their benefit, and two they had to moved to a bigger and more secure company to keep themselves work for life for another risk they will take.

            So far even the business is going down and less than before but as you see everywhere in here, lots of new restaurants and hotels is open in this unsafe situation, it shows the business is regaining their trust from the new class of customer. the new era of Bahrain is begin and the job offer is increasing and some people can feels a bit more secure than before. government is working hard to satisfied the shi'a group and gave what they asked from the government. lets hope this peace situation will continue, so that we can have a great country to live on and make it as number one destination in middle east.
